Güneşte Kurutulmuş Domates Ezmesi


Geçtiğimiz sene artık sağlıklı yaşam adına sağlıksız diyetler yapmaktan vazgeçmeye, ve rejim yapmak yerine köklü bir yaşam tarzı değişikliğine gitmeye karar verdik. 

Hepimizin bildiği üzere sağlıklı yaşam denince akla gelen, uzmanlar tarafından adeta beynimize kazınmış hepimizi hemfikir olduğu iki temel madde var: 
1.) Dengeli ve sağlıklı beslenme 2.) Düzenli fiziksel aktivite. 

Farklı beslenme ve diyet akımları (Vejetaryen, Vegan, Çiğ Vegan, Paleo, Düşük Glisemik, Glutensiz, Atkins, Dukan, Karatay, Akdeniz ...vb) arasındaki fikir ayrılığı bu sağlıklı beslenme şeklinin nasıl sağlanacağı konusunda çıkıyor ve çoğu zaman birinin ak dediğine ötekinin kara demesi yüzünden çok kafa karışıklığı yaratıyor.

Naçizane çok araştırdık, çok okuduk, belli bir akımı değil, kendimize an itibariyle uygun olduğunu düşündüğümüz bir beslenme tarzını benimsemeye ve düzenli spor yapmaya karar verdik. Ne mutlu ki karşılığını da gördük. İşin aslında iyi bilinen sırrı istikrarda yatıyor.

Eşim Stefano hipotiroidi hastası, düzenli ilaç kullanması gerekiyor. Bilen bilir, hipotiroididen muzdarip kişiler kilo vermekte zorlanırlar, enerjileri azdır, daha çabuk yorulurlar. Daha önce diyetisyene gitmek de dahil bin türlü yol ve diyet denememize rağmen bir türlü istediği sonucu alamamıştı.

Benim şahsen tiroid veya fazla kilo problemlerim olmasa da istediğim ölçüde fit değildim. Üzerimde hep bir sırtında taş taşımış hali vardı, ne kadar dinlenirsem dinleneyim kendimi hep yorgun hissediyordum.

Yaptığımız "lifestyle" değişikliği sonucunda kendimizi fazla sıkıp aç kalmadan yavaş ama istikrarlı bir şekilde Stefano 9 ben ise 2 kilo verdik. İkimizin de LDL ve total kolesterolü azaldı, HDL arttı. Kendimizi daha enerjik hissetmeye başladık. Peki bunu nasıl başardık? ( Aman sakın beni bu konuda uzman olarak algılamayın! Sadece belki ilgilenen olur diye bu deneyimimizi sizlerle paylaşmaya karar verdim. )

- İlk olarak düzenli, haftada en az 3-4 kez spor yapmaya başladık. Bunun detaylarından önümüzdeki yazımda bahsedeceğim. 

Beslenme tarzında yaptığımız değişikliklere gelince...

- Beslenmemizdeki protein miktarını arttırdık. Okuduğum pek çok diyetin ortak noktası bu. Yeri gelmişken yazayım, Protein = Et gibi yanlış bir algı var. Biz yediğimiz et miktarını arttırmadan mercimek, kuru fasulye ve yumurta gibi protein miktarı yüksek gıdalara beslenmemizde daha çok yer vermeye başladık.

- Kırmızı et tüketimimiz haftada 1 öğünü geçmiyor. Daha ziyade balık ve tavuk etini tercih ediyoruz. Ayrıca haftada 1 - 2 gün vejetaryen besleniyoruz.

- Kahvaltıda yulaf ezmesi, yoğurt, kuru üzüm, goji üzümü, tarçın ve ceviz karışımı yiyoruz. Özellikle spor yaptığımız günlerde protein içeceği içiyoruz.

- Ekmek, makarna ve pilavı tamamen kesmedik ama azalttık. Yediğimiz zaman tam tahıllı, esmer olanları tercih ediyoruz.

- Bol ve çeşitli sebze, salata ve meyve tüketiyoruz.

- Rafine ve hazır gıda satın almıyoruz.

- Yağsız, az yağlı ve diyet hiçbir ürün tüketmiyoruz. Yediğimiz miktara dikkat etmekle beraber peynirin, sütün, yoğurdun tam yağlısını kullanıyoruz.

- Yemek ve salatalarda sızma zeytinyağı, kullanıyoruz. Salatalara ayrıca kavrulmuş kabak ve/veya ayçekirdeği içi ekliyoruz.

- Kolalı içecekler ve tatlandırıcıyı tamamen kestik. Şekeri ise nerdeyse yok denecek kadar azalttık. (Stefano'nun espressosuna kattığı 1 çay kaşığı gerçek işlenmemiş esmer şekeri saymazsak)

- Akşamları kendimizi 1 - 2 karecik en az %70 kakao oranlı çikolata ile ödüllendiriyoruz. Portakallı, limonlu, zencefilli, karamelli, naneli, licorice, kakao çekirdekli, biberli, rumlu vb pek çok değişik çeşit var, yeni tatlara rastladıkça alıyoruz.
İnsan çok sıkı diyet yapınca ya kısa sürede teslim bayrağını çekiyor ya da rejim biter bitmez yoksun kaldığı şeylere kıtlıktan çıkmışçasına dalıp kısa sürede eski kilosuna dönüyor. O yüzden ipleri çok da sıkmamakta fayda var ;)

- Bol bol su içiyoruz. Şekersiz kahve, yeşil çay, siyah çay, bitki ve meyve çayları içiyoruz.

- Gün içinde planlı bir ara öğünümüz yok ama eğer atıştırmalık bir şey yemek istiyorsak 1 porsiyon meyve veya az miktarda tuzsuz kavrulmuş kuruyemiş (badem, ceviz, brezilya cevizi, fındık, kaju fıstığı) tercih ediyoruz.

- Günde iki tane Omega 3 hapı içiyoruz. (500 EPA / 250 DHA oranlı) Sayısız faydası arasında metabolizmayı hızlandırarak yağ yakmaya yardımcı olması, HDL kolestrolü arttırıp trigliseriti düşürmesi de sayılıyor.

- Haftada 1 öğün serbest bırakıyoruz kendimizi. Çok fazla abartmadan pizza, makarna, brunch, tatlı vb canımız ne istiyorsa onu yiyoruz. Bu özgürlük, uyguladığınız sağlıklı beslenme şeklinin uzun dönemde sürdürülebilirliğini mümkün kılmasının yanısıra, vücudun kendini aç kalma moduna sokup daha az kalori harcamaya başlayarak yağ depolamasını önlemesi açısından da çok önemli .

- Fiziksel aktivite olarak kendimize yürüyüş ve koşuyu seçtik. O deneyimden bir sonraki yazımda anlatayım bari de konu kalsın :)

Sun Dried Tomato Pate

Last year we decided not to keep doing unhealthy diets anymore in the name of (supposedly) healthy living. Instead, we agreed to adopt an essential healthy lifestyle change.

As we all are told many times by the experts and printed on our brains, there are two building blocks for this topic:
1.) A healthy balanced diet 2.) Regular physical activity

The difference of opinion among popular diets (Vegetarian, Vegan, Raw Vegan, Paleo, Low Glysemic Diet, Gluten-free, Atkins, Dukan, Mediterranean...etc) arises of how to achieve that healthy diet. This division of opinions often leaves us, the general public, with confusion.

We researched and tried to read a lot on different takes on the topic. We decided to steer clear of any nutrition trend but adopt an alimentation that we see fit at the moment for ourselves. Happily we've got our effort's worth. The "well-known" secret is being constant.

Stefano, my husband, suffers from hypothyroidism and is on medication. As people familiar with the condition may know, hypothyroid patients often find it difficult to lose weight. They suffer from lower energy levels and get exhausted more easily. We tried different diets in the past, including one by a dietitian, nothing seemed to work until recently.

Even though I didn't have problems with my thyroid neither I had much excess weight, I didn't feel myself fit enough. I had some kind of constant fatigue issue, no matter how much I rested I often felt exhausted.

As a result of our lifestyle change Stefano has lost 9 kg and myself a modest 2 kgs at a slow but consistent pace, without starving ourselves to death. Our LDL and total cholesterol reduced, HDL increased. We've started to feel more energetic. 
How did we succeed this? (I would like to share our own experience with you guys thinking it may interest some but, by all means, do not ever take me as an expert on the topic! )

- Firstly, we started to practice sport regularly, 3 - 4 times a week. I will talk about it in detail in my next post.

As for our change of alimentation...

- We increased protein intake in our diet as we noticed we didn't have as much protein as we thought we did. When losing weight you will want to lose body fat but maintain lean muscle. Protein helps you do that. By the way, there is often a misperception as if Protein = Meat. We increased our protein intake by consuming protein rich foods such as legumes (lentils and beans mostly) and eggs more often, we didn't start eating more meat.

- We have red meat not more than once a week. We rather eat fish or chicken. We are one or two days a week vegeterians.

- For breakfast we eat a mixture of oats, yogurt, raisins, goji berries, cinnamon and nuts. Mostly on the days that we do more physical activity we have protein shake.

- We haven't cut out bread, pasta and rice from our diet but reduced. We rather choose whole grain  varieties when we eat.

- We eat plenty of fruits and vegetables.

- We avoid any refined, processed and convenience foods.

- We don't consume any low/reduced fat or calorie diet products. We rather have full fat alternatives, obviously paying attention on the amount and calorie intake.

- We use extra virgin olive oil for salads and cooking. We add nuts, often toasted sunflower, pumkin and flax seeds, to our salads.

-  We cut out soda and artificial sweeteners altogether. We reduced sugar almost to none (if we don't count 1 teaspoon of unrefined brown sugar that Stefano adds in his espresso) 

- We have a daily treat. We eat 1 - 2 mini square of chocolate which obviously has minimum 70% cocoa ;) They come in many flavors: orange, lemon, mint, licorice, caramel, cocoa beans, ginger, chili, rum and many others.
Very strict diet plans are very hard to stick to. They fail you in so many different levels. You either fall off the vagon very soon or, as soon as you stop dieting you go back to your old eating habits and end up overeating all the things you starved yourself. Therefore we had better not to be too harsh on ourselves ;)

- We drink a lot of water, at least 2 liters a day, plus green, black and herbal teas.

- Even though we don't have any regular, planned snacking between meals, if we feel like to have a snack we opt for one portion fruit or a few unsalted, toasted nuts such as almonds, walnuts, brazilian nuts, hazelnuts and cashews.

- We get two Omega 3 pills a day. (Ours have 500 EPA / 250 DHA) Among its countless benefits they are told to promote weight loss by boosting your metabolism and help you burn fat, increase your HDL cholesterol and lower triglycerides.

- And finally we loosen ourselves once a week. We have one cheat meal. That special meal we enjoy whatever we please such as pasta, pizza, brunch, dessert...etc. It probably goes without saying that we eat reasonably.
This freedom is important for the long-term sustainability of your nutrition plan as well as preventing your body to go in hunger mode which would make you store more fat by slowing down your metabolism and so you'd end up burning less and less calories every day.

- As for physical activity we opted for walking and running. I will talk about that experience in my next post.

Today I'd like to share with you one of our favorite pate recipes...

Ingredients:
600 g water
250 g sun-dried tomatoes
Salt, if needed*

25 g basil leaves
1 clove of garlic
180 g extra virgin olive oil

* My dried tomatoes were already salted so I didn't add any.

Paté di Pomodori Secchi

Ogni anno all’avvicinarsi dell’estate per molti è consuetudine prepararsi alla “prova costume” facendo diete più o meno pericolose abbinate a ore di palestra.  

Durante la scorsa estate siamo arrivati alla conclusione che era necessario un cambio di stile di vita più salutare.

Le diete più famose (vegetariana, vegana, crudismo, paleo, indice glicemico, senza glutine, Atkins, Dukan, mediterranea, a zona, ecc…) si differenziano sul “come” raggiungere lo scopo di dimagrire, lasciandoci spesso con le idee piuttosto confuse.  

Abbiamo ricercato e letto molto sull’argomento, senza pregiudizi o preconcetti, cercando di carpire i pro e lasciare da parte i contro. Dopo tante prove siamo riusciti a trovare la nostra strada, rendendoci conto che è sempre stata davanti ai nostri occhi. Il “segreto non-segreto” è la perseveranza. 

Stefano, mio marito soffre di ipotiroidismo. Chi è familiare con la patologia sa che la tiroide regola il metabolismo e una tiroide poco attiva può avere impatti sull’umore, il livello di energia, a difficoltà nel perdere peso. Abbiamo provato diverse diete nel passato, incluso l’aiuto di un dietista, senza avere avuto risultati soddisfacenti.

Anche io senza avere problemi di tiroide o eccesso di peso, non mi sentivo abbastanza in forma. Un senso di stanchezza generale accompagnava spesso le mie giornate, senza capirne il motivo. 

Come risultato del nostro cambio di stile di vita Stefano ha perso 9 kg e io 2, in modo lento ma costante, sempre mangiando il giusto e senza mai eccedere in un verso o nell’altro. Il nostro colesterolo totale e LDL è diminuito, pur sempre restando entro i limiti, l’HDL è incrementato, e soprattutto io ho iniziato a sentirmi più energica. 

Come siamo riusciti nel nostro intento? (Vorrei solo condividere con voi la nostra esperienza pensando che forse vi possa interessare ma non pensate che sia un’esperta in materia!) 

- Come prima cosa abbiamo iniziato a praticare attività sportiva regolarmente, circa 3-4 volte la settimana. Di questo ne parlerò nel prossimo post. 

Per quel che riguarda il nostro cambio di stile di alimentazione:

- Per prima cosa abbiamo incrementato l’assunzione di proteine, dopo aver notato la carenza nella nostra alimentazione. Durante la perdita di peso è preferibile ridurre la massa grassa senza perdere massa magra. L’assunzione “corretta” di proteine aiuta in tal senso.  Spesso si ha la percezione errata che le proteine si trovino solo nella carne. Potete invece trovare alte quantità di proteine nei legumi (lenticchie, fagioli, piselli e ceci), uova, frutta secca, latticini, quinoa, e altro. 

- Mangiamo carne rosse 3-4 volte al mese. Cerchiamo di variare preferendo pesce o carni bianche. Un paio di volte alla settimana ci “trasformiamo” in vegetariani.

- A colazione usiamo fiocchi d’avena, yogurt, uva sultanina, bacche di goji, cannella e noci. Nelle giornate di maggiore attività fisica utilizziamo un frullato proteico, tenendo conto che l’attività fisica richiede un consumo maggiore di proteine.  

- Non abbiamo rinunciato al pane, alla pasta o al riso, abbiamo solo ridotto la frequenza. Preferiamo le varietà con farina integrale a quelle raffinate.  

- Mangiamo tanta verdura e frutta.

- Cerchiamo di non comprare cibi pronti o raffinati. 

- Non usiamo alimenti dietetici, optiamo per l’alternativa “grassa”, chiaramente tenendo conto dell’ammontare di calorie assunte.

- Usiamo olio extra vergine di oliva per la cottura e per il condimento. Aggiungiamo noci, spesso tostate, semi di girasole o zucca alle nostre insalate. 

- Non assumiamo più bibite gassate o dolcificanti. Io non uso più lo zucchero nel tè e nel caffè, mentre Stefano aggiunge un cucchiaino di zucchero di canna integrale al caffè.  

- In uno dei nostri momenti di relax giornalieri ci gustiamo un paio di scacchi di cioccolato fondente minimo 70%. Se ne trovano di tantissimi gusti: arancio, limone, menta, liquirizia, caramello, fave di cacao, zenzero, peperoncino, rum e tanti altri. 
Diete molte restrittive e monotone sono difficili da seguire. La percentuale di fallimenti è alta per tanti motivi. E’ intrinseco in esse l’impossibilità di continuare per un periodo medio lungo, e spesso si ritorna alle vecchie abitudini. Il mio consiglio è quello di non essere troppo severi con noi stessi;) 

- Beviamo molta acqua naturale, circa 2 litri al giorno, oltre ad alcuni tè neri, verdi o infusi.

- Anche se non pianifichiamo snack al mattino o al pomeriggio, a volte ci premiamo con della frutta fresca o delle noci tostate non salate, mandorle o noci brasiliane, anacardi o nocciole. 

- Due volte al giorno prendiamo l’integratore Omega 3 (il nostro ha 500 EPA e 250 di DHA). Oltre ai molteplici benefici per la salute, promuovono l’incremento del metabolismo, aumentano il colesterolo HDL e abbassano i trigliceridi.  

- E una volta alla settimana anche noi abbiamo la “libera uscita” ;) Di solito per un pasto del fine settimana mangiamo pasta all’uovo, pizza, dolci, ecc. Inutile dirlo che anche in queste occasioni non esageriamo con le quantità. 
Questa libertà è importante per avere un’alimentazione sostenibile a lungo termine, oltre a prevenire che il corpo vada in “modalità digiuno”, ovvero rallentando il metabolismo per far fronte al mancato apporto del minimo di calorie necessarie durante il giorno.

Oggi vorrei condividere con voi una delle mie ricette di paté preferite…


Ingredienti:
600 g di acqua
250 g di pomodori secchi
Sale, solo se c'è bisogno*

25 g di foglie di basilico
1 spicchio di aglio
180 g di olio extravergine di oliva

*  I miei pomodori secchi erano già abbastanza salati quindi non ho aggiunto sale.
