Meatballs and Fennel with Bechamel

Meatballs
30g parmesan
2 eggs
30g flour
20g milk
50g bread crumbs
Salt, pepper
300g minced turkey
200g minced meat



800g fennel

200g white wine
400g water
1 tbsp Thermomix Vegetable Stock Concentrate


Bechamel:
500g milk
80g cheese (such as emmental, kasseri, swiss, gouda etc)
30g butter
50g flour
1/2 tsp salt
Pepper
Nutmeg


  • Grate parmesan speeding up from 2 to 9 for 9 seconds
  • Add eggs, flour, bread crumbs, salt and pepper. Mix for 40 seconds on Speed 4-5
  • Add minced turkey and meat. Mix for 20 seconds on Speed 3-4. Set aside

  • No need to wash TM Bowl. Put wine, water and TM veggie stock. Bring to boil for 10 minutes at Varoma Temperature on Speed 1
  • In the meantime prepare meatballs, coat with flour and place them in Varoma Tray. (I got 19 in total)

  • Cut fennel into thin slices and place in Varoma Bowl

  • When the water starts boiling place Varoma Bowl and tray and steam for 30 minutes at Varoma Temperature on Speed 4
  • Place meatballs in the center of a baking pan surrounded by fennel

  • Empty and wash TM Bowl.
  • Place all bechamel ingredients and mix for 5 seconds on Turbo Speed
  • Cook for 6 minutes at 90°C on Speed 4

  • Pour bechamel over the meatballs and fennel. Sprinkle with some grated parmesan if you like. Bake in preheated oven at 200°C for 15-20 minutes. If you like turn also grill on for the last 5 minutes
  • Serve into plates

Note: You can mince your turkey and beef with Thermomix. You'd need to clean meat of fat and nerves, cut into around 3-4cm pieces and and mince for 10 seconds on Speed 7. According to the book, the max amount for mincing is 300g
